What is a Recipe Base?
Similar to simmer sauce or cook-in sauce, a recipe base is a sauce base that will help you easily create a specific recipe. Our recipe bases are the slow-cooked- and time consuming- part of signature Middle Eastern home meals.
How do I use the jars?
If this is your first time using our sauces we highly recommend following the instructions on the back of the jar or the recipe card that you received with your order. The recipes usually have three steps: 1- Brown the meat and/or vegetable 2- Add the sauce 3- Simmer All the sauces are very versatile and you can get creative by using them in your own home made recipes. Do I use the whole jar?
Adding the full jar will create 4 servings. You may use less depending on how many people you are cooking for. I recommend cooking with the whole jar and freezing the rest of your meal.
How long do they last once opened?
Because we do not use preservatives, they should be treated like any other home cooked food. Our recommendation is that the jar is consumed within 3 weeks once opened. Heat before eating.
Can I make the vegetarian or vegan?
Absolutely! The bases work perfectly with legumes and vegetables. There are suggestions in the recipes. You can also use your imagination and creativity to discover your favourite combination.

Just Add
1 Jar Exotic Bazaar Ghormeh Sabzi
500g diced lamb shoulder or beef
(vegetarian option: 300g halloumi cut into cubes)
1 onion, thinly sliced
3 tbsp extra-virgin olive oil
1 can of cooked red kidney beans
2 whole black limes
1 tsp turmeric (optional)
Method
1- In a medium saucepan, fry the sliced onions with oil until golden. If you have turmeric, then add 1tsp turmeric and fry for another minute.
2- Add the meat pieces (or halloumi) and fry until sealed.
3-Add enough boiling water to the pot to fully cover the ingredients. Reduce heat to medium-low, place the lid on and let the meat cook for 15 minutes. (For halloumi no need to cook for 15 minutes)
4- Add one jar of Exotic Bazaar Ghormeh Sabzi. Add more water/stock if the stew is too dry.
5- Drain then add in the canned kidney beans.
6- Add two Persian black limes.
7- Simmer on low for another 30 minutes, up to 60 minutes to fully develop the flavours.
Serve Ghormeh Sabzi with a side of steamed saffron rice, Persian Tzatziki, and salad.
